In exactly 16 days I will be returning to work for the year and working full time. I have 5 and half weeks of work before my maternity leave starts at 31 weeks pregnant.This time, I'm relieved to be finishing earlier than the normal 36 weeks as we have to be on a close lookout for the complications that happened at the end of Cruz's pregnancy. Not having to relive those moments at work will be a blessing in itself.
With going back to work comes the reality of lunches that need to be made everyday - for three of us. I know that those 5 and a bit weeks are going to take it out of me and that I am going to be more tired than usual so I've decided to conquer the lunchboxes head on while I still have time.
Here comes the math. We will need a 'main' and a snack to add into our lunchbox each day as well as the easy grab from the fridge:
- Crackers and
- 2 x fruit
6 weeks x 5 days a week x 3 people = 90 'meals' and 90 snacks.
This is how I'm going to do it...
Main meals and snacks
Monday - Lasagne and banana bread
Tuesday - Quiche and oat/muesli slice
Wednesday - Pizza scrolls and blueberry muffins
Thursday - Pasta bake and anzac bars
Friday - Home made sausage rolls and banana and choc chip muffins
I will need to have 18 portions of each meal and snack. Over the next 2 weeks I plan on making these batches slowly and adding them to the freezer. If we like these freezable recipes, I am thinking about doing the same thing again once I am on maternity leave - ready for lunches and snacks for Cruz after the baby is born.
Does anyone else freeze snacks ahead of time? Any recipes that I need to know about? I will blog the recipes and pictures including packaging as I make my way through the list!
