Over the last two weeks I have spent a few hours here and there getting ready for the first few weeks of school lunchboxes. I am only returning to work for 5 weeks this term before I begin maternity leave, but because I am working full time I wanted to be prepared.
I did a post on my plan here (which included what I wanted to cook and how much of everything I needed). I have made a slight change to Fridays meals and changed the homemade sausage rolls to homemade meat (mince pies).
Today I thought I would link all the recipes that I used so that you could use them too.
Monday - Lasagne (read below) and Banana Bread here
The lasagne I made as I normally do with fresh lasagne sheets, mince, bolognaise sauce and leftover vegetables from the fridge. I don't use a recipe for it, but as far as I am aware... most lasagnes freeze well.
Tuesday - Quiche here and Muesli slice here
Wednesday - Pizza scrolls here and blueberry muffins here
Thursday - Pasta and zucchini bake here and anzac bars here
Friday - Meat pies (see below) and banana and choc chip muffins here
12 mini Meat Pies
(a recipe given to me from my mother in law)
- 500g mince
- 1 cup water
- 2 dessert spoons plain flour
- 1 teaspoon salt and pepper
- 1 medium onion
- 340g self raising flour
- 170g butter
- 2 pinches salt
- Mix salt, pepper, onion, water and mince in saucepan.
- Cook mince
- Thicken with plain flour
- Sift SR flour and salt
- Rub in butter with fingertips
- Mix to a soft dough with some cold water
- Roll pastry out onto a lightly floured board
- Cut into circles and line patty tins
- Place dessert spoons of mince mixture into pastry shells and cover with a pastry lid
- Brush with milk
- Bake in a hot oven (200 degrees) for 20 minutes or until nicely golden brown
I stored each snack/meal in either clingwrap or resealable sandwich bags so that I could reuse the snack bags. Once they were wrapped I put them into labelled decor containers to prevent freezer burn and to easily see what I had in the freezer.
Each morning I add yogurt, 2 fruit, crackers and cheese to the lunchbox and then check what to add from the freezer for that day. Tomorrow will be our first completed week of using this system and it has been super easy so far.
I have copied and pasted what I have printed out and included on the board in our pantry. It is a reference for what each days lunchbox will include.
