Lunchbox snacks

I have had quite a few e-mails asking for some of the lunchbox snack recipes that I have been making this week. Today I thought I would share two of them with you - the muesli bars and the Anzac slice.


The muesli bars are really, really....really simple. 
All you need is (I doubled everything) mentioned below:

Muesli Bars
4 cups of oats
1 tin of skim condensed milk
Your choice of extras. (Think sultanas, dried fruit or even choc chips)

Mix them together and pop the mix into a slice tin.
Bake for 20 minutes at 180 degrees.
Done.

Just watch them closely so that they don't burn and whatever you do
don't forget to grease that pan. Lesson learnt.   


Anzac Slice found here

1 cup of self raising flour
1 cup of coconut
1 cup of rolled oats
1 cup of sugar (I left the sugar out)
1 cup of crushed nuts (I left the nuts out)
125g of butter, melted
1 tablespoon golden syrup
1 egg

Mix all the ingredients together and press into a greased slice tin. 
Bake at 180 degrees for about 30 minutes.
Done.

* I doubled this recipe as well to make enough for the freezer
 
36 snacks have been made for school lunches thanks to these 2 recipes. The other three snacks are being made as we speak and include two different flavours of muffins and a banana bread. Next week I'll focus on the lunch meals and then hey presto - the first 6 weeks will be taken care of.

  2. Thanks for the great recipes, I have three at school this year so getting a head start on the school lunches is an absolute blessing! I have just stumbled across your blog and love it! Can't wait for the next lot of recipes, my kids loved the sampling they had while I was baking :-)
