Getting back into healthy habits.


Hello again! It would seem I have been missing in action for quite some time now, but I am hoping this will change soon. The last four weeks have been busy. I was working full time, growing this bump that will soon be our baby, tending to a two year old who came down with a cold and then had his tonsils and adenoids removed on Thursday and trying to keep our home running. Today is the first day of my maternity leave and I have started it by trying to get back into some old habits.

This morning I headed to the grocery store and bought our vegetables and fruit (not pictured) for the week. I spent the morning cutting green and red capsicum, tomatoes, carrots, cucumbers and celery. I washed all the lettuce and drained the olives and then packaged them all into their containers. 


I also threw together a quick salad that has cherry tomatoes, olives, cucumber, carrots and capsicum. At night when we put this on the table, I add some lettuce and croutons to our plates. We started cutting our vegetables up at the start of each week, after seeing the idea on Jade's (Super Organiser Mum) blog, and the salad and vegetables have always lasted us just short of the week - which is perfect. It makes it so much easier to make meals after a long day and one of our favourites was making mini pizzas using english muffins and then topping them with our pre cut veggies and some cheese. When I fell pregnant this weekly habit stopped, but today marks a fresh start. 
 

If you're wondering how much space it takes in the fridge, you can see below. This is one shelf (out of 5) in our fridge. It saves a lot more room than having to have whole stalks of celery and bags of carrot and tomato lying around.


Tomorrow I'll be back with some more posts. I have a backlog of posts to write including our trip to the Gold Coast for Valentines Day, Cruz's trip to hospital, the start of Easter in our house and a special cake and the mess that it made.
