{Thermomix} 4 quick and easy treats

Last week I had to make a plate of treats to take to church with me. These four recipes were SO quick and easy in the Thermomix and I just knew you would love them too. Here are the recipes.

::Clinkers Rocky Road::

500 grams milk chocolate melts, milk or dark
300 grams Pascall Clinkers, cut in half
100 grams baby marshmallows
190 grams raspberry lollies
20 grams coconut oil
Place Chocolate melts in TM Closed lid 10 seconds, speed 9.  Scrape down - 10 seconds speed 9.
Melt chocolate and coconut oil in TM bowl for 5 minutes/50/Speed 1.
Scrape down edges and melt for further 5 minutes/Temp 50/Speed soft until desired consistency is achieved.

With one minute to go, change to reverse and add Clinkers, Raspberries and baby marshmallows.

Once combined, place into a lined lamington tray and cool in fridge before cutting into squares. 


Then to clean the Thermomix bowl – put one glass of milk in TM and blitz and then heat milk on 80 degrees, 5 minutes, speed 4.

::Chocolate Balls::

Here's what you'll need:
1 x pack of Arnotts Milk Arrowroot biscuits
1 x 400g tin Nestle Condensed milk
2 x tbsp cocoa
Dessicated coconut

1. Place the entire packet of biscuits in the TM bowl and crush on Speed 5-6 for around 9-10 seconds.  You can either grind these up super fine, or leave small bits of biscuits, depending on your tastes.
2. Add the 2 x tbsp cocoa powder.
3. Add the condensed milk.
4.  Blend on Reverse Speed 4-5 for around 6 seconds until it's really well mixed. 
5. Roll the mixture into balls and then roll in the dessicated coconut.


::Lemon Slice::

1 package Marie biscuits
120 grams Butter
80 grams coconut
200 grams condensed milk
1 lemon

240 grams icing sugar
60 grams Butter
lemon juice
Extra Coconut

1.  Chop Lemon rind for 15-20 seconds on Speed 9
2.  Add biscuits and crush on Speed 8 for 5 seconds.
3.  Add coconut and mix on Speed 4 for 5 seconds
4. Set aside dry mixture.
5.  Add butter to bowl and melt on 60 degrees for 2 minutes.
6.  Add condensed milk and the juice of half a lemon.
7. Add dry mixture back to bowl with butter mixture and mix on Speed 4 for 10 seconds using the spatula to assist.
8. Spread into lined slice tin and set in fridge.
9. Icing - mix icing sugar, butter and lemon juice in bowl on speed 4 for approx 30 seconds.
10.  Spread over cooled slice and sprinkle over extra coconut.


::Vanilla Slice::

1 Packet of Sao biscuits 
1 Packet of Foster Clarks instant custard mix (80g) OR 1 packet of Cottee's vanilla pudding mix (100g)
600ml carton of Whipping Cream
Icing sugar
water for icing

Line a deep square or rectangular container with baking paper and then 1 layer of Sao biscuits (mine measures 26cm x 19 cm which fits 2.5 x 3.5 Sayos).  Place butterfly in the TM bowl and pour in the carton of cream.  Slowly whip cream while adding the custard or pudding mix through the hole in the lid.  Whip for approx 30 sec on speed 2-3 until the custard changes to a thick but spreadable consistency.  Spread custard over the sao's and smooth out and then add a single layer of sao's firmly on top of the custard.  Place container in fridge and leave for a few hours or overnight.  Make up icing in TM to desired consistency and pour/spread over vanilla slice.  Cut and serve.
