Australia Day 2014
It's been a little quiet on the blog as we transitioned into a new year and returned back to work, kindy and daycare. I have been taking the last fortnight slowly and am just starting to resurface again. Better late than never, today I thought I would share the desserts I made for Australia Day.
The trifles were super easy. I made red and blue jelly on the eve of Australia Day and then cut them into little squares in the morning. I then added lamingtons that had been diced, blueberries and strawberries. Just before we were going to serve them I poured the cream over. They were delicious and best of all, they were in the red and blue colour scheme we went with.
The Tim Tam cupcakes were just as easy. I made my usual chocolate cupcakes and chocolate frosting in the Thermomix and then added half a Tim Tam onto each cupcake - easy and delicious!
We had a quiet Australia Day. Balloons were blown up and hung, the kid's pool was filled up and we had pizza delivered to our house before the dessert eating began. It was perfect and the mess that was laying around that night was evidence of the good day that was had by all!
