12 slow cooked meal ideas
In my attempt to simplify as much as I can as I return to work full-time this year, I have lifted the slow cooker back out of the cupboard and I've been trialling different meals in it. We are not a stew or casserole loving family and so I had to ensure that I found meals that we would all enjoy. I looked for meals that only had a few ingredients in them (for easy preparation) as well as a longer cooking time. Not all of these recipes are written as gluten free friendly recipes, but I adapt them as I go and everything has been working perfectly.
Each night I prepare the meal for the next night - cutting up vegetables, marinading meats, and mixing spices if needed. I place the meat, marinade and spices ready to go in a Tupperware marinading dish in the fridge. In the morning, just as we are about to head out, I lift it out of the fridge, place the ingredients into the slow cooker and turn it on low. When I get home in the afternoons I put our sweet potato/normal potatoes into the Thermomix to make mash and I steam any of the vegetables we will be having with our dinner. Neither the mash or the vegetables require much work because they have been pre chopped the night before. I plan on using the time that it takes for the mash and vegetables to cook to unpack school bags and get a start on homework. We have dinner at 5pm here so it is a fairly early dinner.
One thing that I haven't been doing is cooking our vegetables in the slow cooker - I'm not a big fan, but that could change? I don't know.
